Shrimp Po’ Boy
Summer feels like seafood season to me and I find myself eating it multiple times a week. Whether it’s oysters or popcorn shrimp, you’ll find me with seafood all summer!
When I’m craving seafood at home but need a quick and easy meal, I’ll pop open a bag of Gorton’s Popcorn Shrimp and make a Shrimp Po’ Boy. The best part is that it’s ready in under 20 minutes and all you need is a few ingredients and an air fryer.
What you’ll need:
French rolls
Remoulade Sauce (found in the dressing aisle at any grocery store)
Shredded lettuce
Sliced tomatoes
Gorton’s Popcorn Shrimp
Set your air fryer to 400 degrees and toss in your frozen popcorn shrimp. Let it crisp up for about 15 minutes.
In the meantime, lather remoulade sauce on your French roll.
Once the shrimp is crispy, build your po’ boy with lettuce and tomatoes.
If you want to get a little fancy, you can toast your French roll just a little and make the remoulade sauce from scratch. I hope you enjoy this super quick and what I call a “lazy meal” since it requires little to no effort to put together!
