Fresh Strawberry Mojito
Mojitos are always my drink of choice. And they’re even better when you can make everything from scratch! Since we’re in the midst of strawberry season, I used fresh strawberries to make my own juice to create a unique mojito blend that’s refreshing and delicious.
What you’ll need:
A pound of strawberries
Limes (about six)
Mint leaves (one cup)
Agave syrup or honey
Rum
Sparkling water
To begin, cut off the strawberry stems and coarsely chop to blend. You will want to make sure the strawberries are blended until the texture is extremely smooth. I use a Ninja smoothie blender and blend on “extract” mode for at least a full minute.
In a cocktail shaker, muddle together four to six large mint leaves, juice from one lime, and two tablespoons of agave syrup or honey.
Add six tablespoons of strawberry juice to the muddled mixture, and stir until combined.
Add a shot (or two) of rum and stir again.
Pour mixture over ice in a sugar-rimmed glass. Add sparkling water to top it off.
*You can adjust the sweetness and the amount of strawberry juice based on your taste preferences.
Need to make a non-alcoholic version?
Replace the shots of rum with club soda and add extra lime juice! I made one for my sister and she said, and I quote, “Dude, this is so good!”
